Aloo Gobi

Aloo Gobi is a popular Indian entree in which cauliflower florets and potatoes are cooked along with spices. This was our favorite entree at Ghasitaram Halwai's restaurant in Mumbai where we (my cousins, my sister and I) used to eat during weekends! A large glass full of cool Masala Chaash or lassi and then  malai kulfi :)

A quick, rustic meal with roughly chopped veggie and thick tandoori roti is our favorite and reminds us of dhaba (road side) food.
Ingredients:
1 medium cauliflower head
1 medium sized potato
4 tbsp. oil
1 tsp. fennel seeds
1 tsp. coriander seeds
1 tsp. cumin seeds
3/4 tsp. mustard seeds
2-3 dry red chilies
1 tsp. turmeric powder
1 tsp. red chili powder
1 tbsp. coriander powder
1 tbsp. garam masala powder
Salt to taste
Juice of 1 lime
Cilantro for garnishing 
  • Separate Cauliflower florets and peal and cut 1 large potato into wedges.
  • Heat 4 tbsp. oil. Add coriander seeds, fennel seeds, cumin seeds and mustard seeds. When they start cracking...
  • Add 1 tsp. turmeric powder and dry red chilies. Fry for 30 seconds.
  • Add cauliflower florets and large potato cubes
  • Add salt, toss veggies well, cover and cook for 6-8 minutes or till almost done. Do not over cook the veggies.
  • Add red chili powder, 1 tbsp. coriander powder, 1 tbsp. garam masala powder. Toss the spices well.
  • Cover and cook for 4-5 minutes.
  • Squeeze some fresh lime and sprinkle freshly chopped cilantro.
Here is step-by-step pictorial recipe:

Add cauliflower florets and potato cubes.


Add salt, toss veggies well, cover and cook for 6-8 minutes.

Add red chili powder, 1 tbsp. coriander powder, 1 tbsp. garam masala powder. Toss the spices well.
Cover and cook for 4-5 minutes.


Squeeze some fresh lime and sprinkle freshly chopped cilantro.

Serve with fresh rotis/chapatis. I made fresh roti on griddle made of clay to give fresh tandoori flavor.
