Paneer Tikka Roll

We all would like our family to eat healthy wholesome meal, and to consume all food groups necessary. But, it is not always possible to prepare salads, breads, veggies on busy weekdays. We all need quick recipes and something easy to take to work too. Presenting, Paneer Tikka Roll!! This roll is a good source protein, vitamins and carbs in one homemade dish. Like I told you few days back, I have been trying to make more wholesome, and delicious meals for my family. With most of the preps done in advance, this will surely suit your family needs too.

Paneer Tikka Roll consists of deliciously marinated and cooked Indian Cottage cheese pieces accompanied by veggies. Non Vegetarians can add protein of their choice, maybe something like grilled chicken or eggs. Served with variety of chutnies, this roll is surely a winner!

Start by preparing a chilli garlic marinade.
This will be used later as chutney too.
Heat 2 tbsp. oil. Turn of the heat and fry 15-20 dry red chillies. Let them be in there till the oil cools.

Grind fried chillies with remaining oil, 3-4 cloves of garlic, and salt. 
Use 1/4 cup water to make a paste.



 Make Mint Cilantro Chutney.
1/2 cup cilantro, 4-5 mint leaves, 1 tbsp. peanuts, 1/2 tsp. cumin seeds, 2 green chillies, 1/2 tsp. salt lime juice.
Grind well with little water.

Use hung curd, which means the water content of the curd/yogurt is removed.
I use a sieve/mesh and let 1 cup yogurt rest in there for an hour. Water from yogurt easily drips in another bowl. That water can be used to make yogurt drink or could be added to make the bread dough.



To prepare tandoori masala.
Dry roast 1 tbsp. cumin seeds, 8-10 peppercorns, 8-10 cloves, 1 inch cinnamon, 2 star anise, 3-4 dry red chillies, mace and nutmeg. Add 1 tbsp dry kasoori methi.
Just roast till the spices warm up a bit, filling the air with spicy aroma.


Cool and grind to form a powder.


To the yogurt, add 1 tbsp. of chilli garlic marinade, 1 1/2 tbsp. tandoori masala, 1 tsp. dry kasoori methi, 1 tsp. salt, 1/2 tsp. chilli powder. Mix well.







Cut 250 grams of cottage cheese/Paneer into bite size cubes. Add to yogurt marinade. Add few bell pepper cubes too. Marinate for 30 minutes.


To make a simple flat bread.
Mix 2 cups wholewheat flour, 1 tsp. salt, 2 tsp. oil. Make a dough using 3/4-1 cup water. Pour a little water at a time while forming the dough. Do not make it too soft. You could use multigrain flour too. 

Knead the dough for 3-4 minutes and set it aside for 20 minutes.


Divide the dough into 4-5 parts and make small balls


Add few cubed onions to the marinade just before grilling them on hot griddle.

On a hot griddle, spread paneer, bell pepper and onion pieces. Flip to cook on both sides.





 Remove into a plate and cover to keep it warm.

Roll the dough in dry flour and roll to form a 10-12 inch circle.





On a hot griddle, place rolled roti/bread and roast on both side for around 20-25 seconds on each side. Do not press the flat bread. That might make it crisp and difficult to roll.





The heat on the griddle will make the bread puff. This ensures the bread is well cooked! :)



Lightly spread chilli garlic marinade on the bread. Place shredded lettuce, sliced onions, grilled paneer, tomatoes, and sprinkle some chaat masala.







Roll and wrap in the foil.


Serve with chilli garlic marinade chutney and mint and cilantro chutney along with chilled yogurt drink. This is a great combination of spicy roll with chilled drink!
