Purple Aloo Paratha

Purple potatoes are so attractive that every time I see them at the farmer's market, I just buy them :) Snehanshu loves to make purple potato chips. They turn blue in color and are deliciously crisp.

Recently someone just enlightened me on the benefits of consuming purple potatoes. Truely speaking, I had no idea about it. But, here is the link to Health benefits of Purple Potatoes. Tonight was an easy and quick dinner. Something that I make often. Aloo Paratha: flatbread stuffed with spiced potatoes served with yogurt and onions. This recipe will make 10-12 medium parathas

Boil 4 large purple potatoes. Peel and mash them. Add salt to taste, lime juice, ginger and green chilli paste, 1 tbsp. cumin seeds and handful of chopped cilantro. Mix well.

To make the dough:
3 cups of wheat flour can make 10-12 parathas. Take flour in a wide mixing bowl.
Add 3 tsps. of salt and 3 tbsps. of oil.
Add 1/2 cup water and start mixing the flour quickly.
Add another 1/2 cup and continue till the dough binds. 
Around 1 1/2 cup of water is needed to form a soft malleable dough. At first the dough may look and feel sticky. That's okay!
Add few drops or 1/8 tsp. of oil and knead the dough well.
The dough turns non-sticky and soft. Cover and let the dough rest for at least 10 minutes before rolling it into a paratha.
Divide the dough and potato stuffing into 10-12 equal parts.
Dip each dough ball into dry flour and roll it to 6 inch diameter circle.
 Add an ice-cream scoop full of potato filling.
 Gather the sides to form a pull string bag.
 Press the dough and filling to flatten it.
 Dip in dry flour again and start rolling it lightly.
 Roll it gently to form 8-9 inch diameter circle.



 Gently put the paratha on hot griddle.
 Flip in a minute and brush some oil or ghee on it.
 Flip and fry for a minute, and brush some oil or ghee on the second side too.
Fry on both sides and serve hot.



Parathas served with chilled plain yogurt and a dollop of butter.

  2. Mom and you make it look and sound so easy. I have seen you guys do it all my life however when I try to roll the paratha the potato oozes out of the dough and sticks to the rolling pin :( also at the end the paratha has the dough concentration on the center and sides have the potato. what am i doing wrong??

    1. haha :) make your dough soft. A pliable dough will not break when rolling it. Also mash potatoes well. Use a pav bhaji masher or grater to grate it. Chunks of potato can make the paratha break.
